Cake,cake,cake!!!

I made this for my dad and my little brother,and everyone loved is so much that I thought I should share it!
         
                 ~Mom's Carrot Cake~
2 cups sugar                                 1 1/2 cups vegetable oil
2 cups flour                                  4 eggs
2 tsp baking soda                         3 cups grated carrots
1 tsp salt                                      1/2 cup chopped pecans
3 tsp cinnamon
20 oz can crushed pineapple
  (drained)                               


Preheat oven to 350f. Butter and flour two 9in. cake pans. Mix sugar,flour,baking soda,salt,and cinnamon in a small bowl.Set aside. Mix oil,eggs,pineapple and carrots.Beat in dry ingredients.Fold in pecans. Pour evenly into both cake pans,and bake 30 - 35min. or until center is done.Frost when cool.

Frosting:
 2 sticks butter                                 4 tsp vanilla extract
 2 (8 oz) blocks cream cheese          1 cup pecans
 24 oz powdered sugar

Beat butter and cream cheese until smooth.Blend in powdered sugar,and vanilla.Fold in pecans.

  1. I love carrot cake!! Something I tried recently that we someone should try, is carrot cake cookies with the frosting in the middle to make a sandwich. Quite delicious!

  2. I thought it said 11 1/2 cups! Wow, good thing I didn't make it. :) That would have been a lot of oil!
